Our story
Dila is the Georgian word for morning.
We opened with a simple idea: the best part of the day should not be rushed. So we found a room in Sololaki, a few steps from the sulphur baths and the crooked balconies, and filled it with long tables and good light.
The menu is European at heart, with eggs, pastry and proper coffee, and Georgian where it makes things better: sulguni cheese, walnut honey, tarragon lemonade, bread from the stone oven down the street.
